Before I dive into this post, I wanted to share the beautiful poem Rosie and Jay chose to put in their wedding program – I feel that it will properly set the tone for a post about a wedding ❤

Love me when I’m old and shocking
Peel off my elastic stockings 

swing me from the chandeliers 
Let’s be randy bad old dears
Push around my chrome bath chair 
Let me tease your white chest hair 
Scaring children, swapping dentures 
Let us have some great adventures
Take me to your special places
Watching all the puzzled faces
You in shorts and socks and sandals
Me with warts and huge love handles

Jet Lagged in London – Day 1

Current writing location: On a train out of Euston Station in London heading to Carlisle, Englnd enjoying a cider while a rather large English man listens to Luke Bryan, extremely loud on his iPod.

After a seven hour flight, it felt wonderful to stretch our legs and hit the ground running in London. It’s been almost nine months since I’ve been here and the first time experiencing London during the summertime. I packed expecting to be in cool, cloudy weather with the expected light drizzle – happy to report I was totally wrong. London was experiencing a record high temperature on Wednesday and unusually high humidity. Which sounds fine – sunshine, warm weather what could be wrong with that?! Well nothing really, this is me being somewhat of a diva – but air conditioning is a luxury that this gorgeous European city doesn’t have – or really even need. When Life Hands You Lemons, Make Lemonade

On Tuesday, March 24, I start my new adventure at Ferguson Advertising in Fort Wayne, IN. After having a few months off I can honestly say I haven’t been this excited to start a new position since I graduated college. During my time off, I stayed true to form and used the time to better myself—to make sure that when I did land a job, I would be Lauren V 6.0! While I was doing a little bit of soul searching it was brought to my attention how many people my age are out of work, having trouble finding a job, in a weird spot in their life, etc. and just like me, they were trying to use this time to better themselves. Since I get to start a new chapter to my life on Tuesday, I figured I would share how I used this time to better myself, instead of crying into a gallon of ice cream every night. Recipe: Mango Jalapeno Tacos

Tacos taste better on Tuesdays, it’s a fact…I think. This past Tuesday Emma and I decided to step outside of the Ortega taco box and create our own. These delicious and easy to make chicken tacos are topped with a Mango Jalapeno salsa that is sure tickle your tastebuds!  Just a few simple ingredients and 35-40 minutes of prep time are all you need to take Taco Tuesday to the next level.
